Coffee Cup Scramble
My kids love microwaved scrambled eggs.  We prefer American cheese opposed to Cheddar cheese used in this recipe. And, if I were to make eggs this way…I would mix the cheese in after I stirred the eggs 1/2 way through. This also would be a good recipe for the kids who want to start cooking but aren’t quite ready to use the stove yet.  I’m sure kids would love this recipe just because they are cooked in a coffee cup!
 

Coffee Cup Scramble

Coffee Cup Scramble 
Serves: 1
Cooking Time: 1 min

Ingredients
2 eggs
2 tablespoons milk
2 tablespoons shredded Cheddar cheese
Salt and pepper to taste

Instructions
Coat a 12-ounce microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended.
Microwave 45 seconds at high power; stir. Microwave 30 to 45 seconds more, or until eggs are almost set (see Note).  Top with cheese, season with salt and pepper, and serve.

Note: Since microwave ovens vary, you may need to adjust the cooking time.

Amazingly enough…I have discovered that Shaw’s, Rite Aid, and Hannaford have already teamed up with SavingStar.com in my area!  All I need to do is register my cards on their site.  This is my kind of couponing!  Besides, what’s the difference if I save the day I shop, or by receiving my cash back later?  It’s not as if we have stores in our area that do a lot of double couponing :-(.  In all honesty, I would probably save much more than I do now with my paper coupons…they simply stress me out!  I actually see this as a great way for me to save for Christmas!
