Make a Weeknight Meal ‘Special’ – thanks to Bertolli! Yes, Bertolli gave me a challenge to make a weeknight meal special using one of their many soup flavors. I had a maximum of one hour to complete the challenge, and I must say, I had plenty of time out of that hour left over where we were able to finish eating in that hour’s time.
So what was it that I put together for a nutritious meal in less than an hour? We had garlic bread sticks, a garden salad, Bertolli’s Chicken and Rotini Pasta Soup, and a beverage. The table was set with candles aglow, a tablecloth, and the dinnerware.
Preparing the dinner was easy-peasy. I preheated the oven while I arranged the garlic sticks on the baking tray. Those were then popped into the oven. I then put the soup on the stove. This was as simple as retrieving the bag from the freezer, pouring the contents into a saucepan, adding one cup of water and letting it heat up thoroughly – about 10 minutes. While that was heating up, I made the salad which was prepackaged (just love that!) into the bowls. I then dressed the table and by the time all this was said and done – 25 minutes had passed! Check out this bowl of Bertolli’s Chicken and Rotini Pasta Soup. I added absolutely nothing to it other than what the directions called for – one cup of water. There were diced carrots, celery, peppers, summer squash, chunks of chicken, rotini pasta amongst a very flavorsome thick broth. My 14 yr. old loved it! We all loved it.
Here’s the table – just waiting for us to sit down and enjoy a quiet dinner together.
