Bacon Lovers…you might just really like Skillet Bacon Jam – the product I was recently given the opportunity to try.  This jam has the consistency of a jam spread, with little chunks of bacon throughout, mingled with several spices.   To be more specific: “We make this bacon spread condiment called bacon jam. You say what? That’s right, we use Niman ranch bacon and render it down along with onions, balsamic and other spices.  It cooks for several hours until it is a perfect blend of smoky, tangy, savory and slightly sweet…basically, spreadable, bacony goodness!  The product is USDA approved and a signature product of Seattle’s Chef Josh Henderson.

First I tried the jam on a spoon and thought I wasn’t going to like the jam.  I could really taste the vinegar,  which I am not fond of. However out of all fairness, I decided I should try the jam the way it was to be intended, as a spread.  I went to town making English muffins as the base for the dropped eggs on toast we were having for dinner.  I then spread the Skillet Bacon Jam on the English muffin followed by the eggs.  This made a world of difference.  I could taste the spices and the bacon pieces with each bite I took.  The bacon pieces were a nice addition to ordinary dropped eggs.  Their website has many recipes giving you ideas on how to use the spread.  A recipe I want to try is the Bacon Jam Stuffed Potato Skins.For more information on the Skillet Bacon Jam, go to www.skilletstreetfood.com
